Chateau Bauduc Sauvignon Blanc, France
Made from handpicked grapes from a block of Semillon which had been planted a decade earlier, and pressed and cool fermented the juice. A secondary fermentation in bottle has created a sparkling wine that is dry, elegant, and very refreshing.
