Bollinger Champagne, since its creation in 1829, Bollinger has been family-owned.
The quintessential House style of Bollinger is known for its Pinot Noir dominance and handcrafted rich character. Bollinger is one of the few champagne houses to grow all their own grapes and the house of Bollinger offers to wine lovers, wines which are different.
"I only drink champagne when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not in a hurry and drink it when I am, otherwise, I never touch the stuff unless I am thirsty"
Lily Bollinger.
The grapes that form the non-vintage blends derive mainly from Grands and Premiers Crus vineyards.
Unusually for the champagne region, Bollinger owns 163 hectares of vines which provides 60% of the grapes needed. Even though the grapes are of the highest quality, Bollinger only uses juice from the first pressing, called the "Cuvee". The House chooses to vinify a certain part of its Special Cuvee & Rose in old wood barrels, a technique quite unique in Champagne. A proportion of these wines will then be aged and used as reserve wines in the special Cuvee & Rose blends. Bollinger matures these reserve wines, in magnums under natural cork for between five to twelve years before they are incorporated into the blend guaranteeing the consistency and quality of the Bollinger style.
